
Mexican Inspired Bowl

Ingredients :
For the base :
Cooked rice (white or brown), mixed with:
β 1 tsp black sesame seeds
β 1 tsp golden sesame seeds
β Juice of 1 lime
β A drizzle of olive oil
β Pinch of salt
For the black beans :
1 cup cooked black beans
1 small shallot, finely chopped
Juice of 1 lime
Olive oil, salt, pepper
A handful of chopped fresh coriander
For the avocado cream :
1 ripe avocado
2 tbsp sour cream (or yogurt)
β Blend until smooth and creamy.
For the salsa :
1 tomato, diced
1/4 red onion, finely chopped
1/4 cucumber, diced
Juice of 1 lime
Olive oil, salt, pepper
Other toppings :
Sliced avocado
Tortilla chips
froodies freeze-dried sweet corn
Paprika
Fresh coriander leaves
Instructions :
Prepare the rice: mix cooked rice with sesame seeds, lime juice, olive oil, and a pinch of salt. Set aside.
Dress the beans: in a bowl, combine black beans with shallot, lime juice, olive oil, coriander, salt, and pepper.
Blend the avocado cream: until smooth.
Make the salsa: mix diced tomato, red onion, cucumber, lime juice, olive oil, salt, and pepper.
Assemble the bowl: Start with the rice, add the black beans, a dollop of avocado cream, tomato salsa, avocado slices, and a handful of froodies sweet corn.
Top it off with tortilla chips, a pinch of paprika, and fresh coriander.
Serve immediately and enjoy this crunchy, creamy, zesty bowl of sunshine!
